Chana Masala

Ingredients

  • *2 cans (400g each) chickpeas, drained
  • *1 can (400ml) crushed tomatoes
  • *1 large onion, finely diced
  • *3 cloves garlic, minced
  • *1 tbsp ginger, grated
  • *2 tsp cumin
  • *2 tsp coriander
  • *1 tsp turmeric
  • *1 tsp chili powder
  • *Fresh cilantro and lemon

Instructions

  1. 1Heat oil in a pan and cook onion until deeply golden, about 10 minutes.
  2. 2Add garlic, ginger, and all spices. Cook for 2 minutes until very fragrant.
  3. 3Add crushed tomatoes and simmer for 10 minutes until thickened.
  4. 4Add chickpeas and 1/2 cup water. Simmer for 15 minutes, mashing a few chickpeas to thicken the sauce.
  5. 5Finish with a squeeze of lemon juice and fresh cilantro. Serve with basmati rice or naan.
