Chana Masala

Ingredients
- *2 cans (400g each) chickpeas, drained
- *1 can (400ml) crushed tomatoes
- *1 large onion, finely diced
- *3 cloves garlic, minced
- *1 tbsp ginger, grated
- *2 tsp cumin
- *2 tsp coriander
- *1 tsp turmeric
- *1 tsp chili powder
- *Fresh cilantro and lemon
Instructions
- 1Heat oil in a pan and cook onion until deeply golden, about 10 minutes.
- 2Add garlic, ginger, and all spices. Cook for 2 minutes until very fragrant.
- 3Add crushed tomatoes and simmer for 10 minutes until thickened.
- 4Add chickpeas and 1/2 cup water. Simmer for 15 minutes, mashing a few chickpeas to thicken the sauce.
- 5Finish with a squeeze of lemon juice and fresh cilantro. Serve with basmati rice or naan.
