Coq au Vin

Ingredients
- *1 whole chicken, cut into 8 pieces
- *750ml red Burgundy wine
- *200g lardons
- *250g button mushrooms
- *12 pearl onions, peeled
- *3 cloves garlic, crushed
- *2 tbsp tomato paste
- *2 tbsp flour
- *Fresh thyme and bay leaves
- *2 tbsp butter
Instructions
- 1Season chicken and brown in butter over high heat. Remove and set aside.
- 2In the same pot, cook lardons until crispy. Add pearl onions and mushrooms, cook 5 minutes.
- 3Stir in garlic, tomato paste, and flour. Cook for 2 minutes.
- 4Pour in the wine, scraping up browned bits. Add thyme and bay leaves.
- 5Return chicken to the pot, cover, and braise in a 325F oven for 1 hour.
- 6Remove lid, simmer on stovetop for 15 minutes to reduce the sauce. Serve with crusty bread.
