Coq au Vin

Ingredients

  • *1 whole chicken, cut into 8 pieces
  • *750ml red Burgundy wine
  • *200g lardons
  • *250g button mushrooms
  • *12 pearl onions, peeled
  • *3 cloves garlic, crushed
  • *2 tbsp tomato paste
  • *2 tbsp flour
  • *Fresh thyme and bay leaves
  • *2 tbsp butter

Instructions

  1. 1Season chicken and brown in butter over high heat. Remove and set aside.
  2. 2In the same pot, cook lardons until crispy. Add pearl onions and mushrooms, cook 5 minutes.
  3. 3Stir in garlic, tomato paste, and flour. Cook for 2 minutes.
  4. 4Pour in the wine, scraping up browned bits. Add thyme and bay leaves.
  5. 5Return chicken to the pot, cover, and braise in a 325F oven for 1 hour.
  6. 6Remove lid, simmer on stovetop for 15 minutes to reduce the sauce. Serve with crusty bread.
