Ingredients
- *1 whole chicken, cut into pieces
- *4 large onions, finely diced
- *3 tbsp berbere spice
- *4 tbsp niter kibbeh (spiced butter)
- *4 hard-boiled eggs
- *3 cloves garlic, minced
- *1 tbsp ginger, grated
- *Juice of 1 lemon
- *Salt to taste
Instructions
- 1Dry-cook the diced onions in a heavy pot over medium heat for 20 minutes, stirring frequently until deeply golden.
- 2Add the niter kibbeh, garlic, and ginger. Cook for 5 minutes until fragrant.
- 3Stir in the berbere spice and cook for 2 minutes, then add 1 cup of water. Simmer for 15 minutes.
- 4Marinate the chicken pieces with lemon juice and salt, then add them to the pot. Cover and simmer for 45 minutes.
- 5Score the hard-boiled eggs and nestle them into the sauce for the last 15 minutes of cooking.
- 6Serve with injera flatbread.
