Ingredients

  • *1 whole chicken, cut into pieces
  • *4 large onions, finely diced
  • *3 tbsp berbere spice
  • *4 tbsp niter kibbeh (spiced butter)
  • *4 hard-boiled eggs
  • *3 cloves garlic, minced
  • *1 tbsp ginger, grated
  • *Juice of 1 lemon
  • *Salt to taste

Instructions

  1. 1Dry-cook the diced onions in a heavy pot over medium heat for 20 minutes, stirring frequently until deeply golden.
  2. 2Add the niter kibbeh, garlic, and ginger. Cook for 5 minutes until fragrant.
  3. 3Stir in the berbere spice and cook for 2 minutes, then add 1 cup of water. Simmer for 15 minutes.
  4. 4Marinate the chicken pieces with lemon juice and salt, then add them to the pot. Cover and simmer for 45 minutes.
  5. 5Score the hard-boiled eggs and nestle them into the sauce for the last 15 minutes of cooking.
  6. 6Serve with injera flatbread.
