French Onion Soup

Ingredients

  • *6 large yellow onions, thinly sliced
  • *4 tbsp butter
  • *1 cup dry white wine
  • *6 cups beef broth
  • *4 slices crusty bread
  • *200g Gruyere cheese, shredded
  • *2 sprigs fresh thyme
  • *1 bay leaf
  • *Salt and pepper

Instructions

  1. 1Melt butter in a heavy pot over medium-low heat. Add onions and cook slowly for 40 minutes, stirring occasionally, until deeply caramelized.
  2. 2Deglaze with white wine, scraping up all the fond. Cook until wine is reduced by half.
  3. 3Add beef broth, thyme, and bay leaf. Simmer for 20 minutes. Season with salt and pepper.
  4. 4Ladle soup into oven-safe bowls. Top each with a bread slice and generous Gruyere.
  5. 5Broil until cheese is bubbly and golden brown, about 3 minutes. Serve immediately.
