French Onion Soup

Ingredients
- *6 large yellow onions, thinly sliced
- *4 tbsp butter
- *1 cup dry white wine
- *6 cups beef broth
- *4 slices crusty bread
- *200g Gruyere cheese, shredded
- *2 sprigs fresh thyme
- *1 bay leaf
- *Salt and pepper
Instructions
- 1Melt butter in a heavy pot over medium-low heat. Add onions and cook slowly for 40 minutes, stirring occasionally, until deeply caramelized.
- 2Deglaze with white wine, scraping up all the fond. Cook until wine is reduced by half.
- 3Add beef broth, thyme, and bay leaf. Simmer for 20 minutes. Season with salt and pepper.
- 4Ladle soup into oven-safe bowls. Top each with a bread slice and generous Gruyere.
- 5Broil until cheese is bubbly and golden brown, about 3 minutes. Serve immediately.
