Ingredients
- *500g lean beef, freshly minced
- *4 tbsp niter kibbeh (spiced butter), warmed
- *2 tbsp mitmita spice blend
- *200g ayib (fresh Ethiopian cheese) or ricotta
- *200g gomen (collard greens), cooked
- *Injera for serving
- *Salt to taste
Instructions
- 1Warm the niter kibbeh in a pan until melted but not hot. Mix in the mitmita spice.
- 2In a bowl, combine the minced beef with the spiced butter. Mix thoroughly until the meat is evenly coated.
- 3For leb leb (lightly cooked) style, briefly warm the mixture in a pan for 2-3 minutes, stirring gently.
- 4Serve on a platter with ayib and cooked gomen on the side, with injera for scooping.
