Ingredients

  • *500g lean beef, freshly minced
  • *4 tbsp niter kibbeh (spiced butter), warmed
  • *2 tbsp mitmita spice blend
  • *200g ayib (fresh Ethiopian cheese) or ricotta
  • *200g gomen (collard greens), cooked
  • *Injera for serving
  • *Salt to taste

Instructions

  1. 1Warm the niter kibbeh in a pan until melted but not hot. Mix in the mitmita spice.
  2. 2In a bowl, combine the minced beef with the spiced butter. Mix thoroughly until the meat is evenly coated.
  3. 3For leb leb (lightly cooked) style, briefly warm the mixture in a pan for 2-3 minutes, stirring gently.
  4. 4Serve on a platter with ayib and cooked gomen on the side, with injera for scooping.
