Margherita Pizza

Ingredients
- *300g tipo 00 flour
- *180ml warm water
- *7g instant yeast
- *1 tsp salt
- *200g San Marzano tomatoes, crushed
- *200g fresh mozzarella
- *Fresh basil leaves
- *Extra virgin olive oil
Instructions
- 1Mix flour, yeast, salt, and warm water. Knead for 10 minutes until smooth and elastic. Cover and let rise for 90 minutes.
- 2Preheat oven to its highest setting (ideally 500F+) with a pizza stone or inverted baking sheet inside.
- 3Divide dough in half. Stretch each piece into a thin round on a floured surface.
- 4Spread crushed tomatoes, tear mozzarella over the top, and drizzle with olive oil.
- 5Slide onto the hot stone and bake for 10-12 minutes until the crust is blistered and cheese is bubbly.
- 6Top with fresh basil leaves and another drizzle of olive oil before serving.
