Nashville Hot Chicken

Ingredients

  • *8 chicken tenders
  • *2 cups buttermilk
  • *2 cups flour
  • *3 tbsp cayenne pepper
  • *1 tbsp brown sugar
  • *1 tbsp paprika
  • *1 tsp garlic powder
  • *Oil for frying
  • *Pickle slices
  • *White bread slices

Instructions

  1. 1Soak chicken in buttermilk for at least 2 hours (overnight is best).
  2. 2Mix flour with 1 tbsp cayenne, paprika, garlic powder, salt, and pepper.
  3. 3Dredge chicken in the flour mixture, shaking off excess. Let rest on a rack for 10 minutes.
  4. 4Fry at 350F for 6-7 minutes per side until golden and cooked through (internal temp 165F).
  5. 5Mix remaining cayenne, brown sugar, and 1/4 cup of the frying oil to make the hot paste. Brush generously over the fried chicken.
  6. 6Serve on white bread with pickle slices.
