Nashville Hot Chicken

Ingredients
- *8 chicken tenders
- *2 cups buttermilk
- *2 cups flour
- *3 tbsp cayenne pepper
- *1 tbsp brown sugar
- *1 tbsp paprika
- *1 tsp garlic powder
- *Oil for frying
- *Pickle slices
- *White bread slices
Instructions
- 1Soak chicken in buttermilk for at least 2 hours (overnight is best).
- 2Mix flour with 1 tbsp cayenne, paprika, garlic powder, salt, and pepper.
- 3Dredge chicken in the flour mixture, shaking off excess. Let rest on a rack for 10 minutes.
- 4Fry at 350F for 6-7 minutes per side until golden and cooked through (internal temp 165F).
- 5Mix remaining cayenne, brown sugar, and 1/4 cup of the frying oil to make the hot paste. Brush generously over the fried chicken.
- 6Serve on white bread with pickle slices.
