Ingredients
- *250g flat rice noodles
- *200g shrimp, peeled and deveined
- *2 eggs
- *3 tbsp tamarind paste
- *2 tbsp fish sauce
- *1 tbsp palm sugar
- *100g bean sprouts
- *4 green onions, sliced
- *50g roasted peanuts, crushed
- *1 lime, cut into wedges
Instructions
- 1Soak rice noodles in warm water for 20 minutes until pliable, then drain.
- 2Mix tamarind paste, fish sauce, and palm sugar in a small bowl to make the sauce.
- 3Heat oil in a wok over high heat. Cook shrimp for 2 minutes, then push to the side. Scramble eggs in the wok.
- 4Add noodles and sauce. Toss everything together for 2 minutes until noodles are coated.
- 5Add bean sprouts and green onions, toss for 30 seconds.
- 6Serve topped with crushed peanuts and lime wedges.
