Ingredients

  • *250g flat rice noodles
  • *200g shrimp, peeled and deveined
  • *2 eggs
  • *3 tbsp tamarind paste
  • *2 tbsp fish sauce
  • *1 tbsp palm sugar
  • *100g bean sprouts
  • *4 green onions, sliced
  • *50g roasted peanuts, crushed
  • *1 lime, cut into wedges

Instructions

  1. 1Soak rice noodles in warm water for 20 minutes until pliable, then drain.
  2. 2Mix tamarind paste, fish sauce, and palm sugar in a small bowl to make the sauce.
  3. 3Heat oil in a wok over high heat. Cook shrimp for 2 minutes, then push to the side. Scramble eggs in the wok.
  4. 4Add noodles and sauce. Toss everything together for 2 minutes until noodles are coated.
  5. 5Add bean sprouts and green onions, toss for 30 seconds.
  6. 6Serve topped with crushed peanuts and lime wedges.
