Palak Paneer

Ingredients
- *400g fresh spinach
- *250g paneer, cubed
- *1 onion, diced
- *2 tomatoes, chopped
- *3 cloves garlic, minced
- *1 tbsp ginger, grated
- *1 tsp cumin seeds
- *1 tsp garam masala
- *1/2 cup cream
- *2 tbsp ghee
Instructions
- 1Blanch spinach in boiling water for 2 minutes, then transfer to ice water. Blend into a smooth puree.
- 2Heat ghee in a pan. Add cumin seeds and let them splutter. Saute onion, garlic, and ginger until golden.
- 3Add tomatoes and cook until softened. Stir in garam masala.
- 4Pour in the spinach puree and simmer for 10 minutes.
- 5Add paneer cubes and cream. Simmer for 5 minutes. Serve with naan or roti.
