Quiche Lorraine

Ingredients
- *1 pre-made pie crust
- *200g thick-cut bacon, diced
- *150g Gruyere cheese, shredded
- *4 large eggs
- *1.5 cups heavy cream
- *1/2 cup whole milk
- *1 small onion, thinly sliced
- *Fresh nutmeg
- *Salt and pepper
Instructions
- 1Preheat oven to 375F. Fit pie crust into a tart pan and blind bake with pie weights for 15 minutes.
- 2Cook bacon until crispy. Saute onion in the bacon fat until softened.
- 3Spread bacon, onion, and Gruyere evenly in the pre-baked crust.
- 4Whisk eggs, cream, milk, nutmeg, salt, and pepper. Pour into the crust.
- 5Bake for 35-40 minutes until set and golden on top. Let rest for 10 minutes before slicing.
