Shiro Wot

Ingredients
- *1 cup shiro powder (roasted chickpea flour)
- *2 large onions, finely diced
- *3 tbsp oil
- *3 cloves garlic, minced
- *1 tbsp ginger, grated
- *2 tbsp tomato paste
- *1 tsp turmeric
- *Salt to taste
- *Injera for serving
Instructions
- 1Cook onions in oil over medium heat until softened and translucent, about 10 minutes.
- 2Add garlic, ginger, tomato paste, and turmeric. Cook for 3 minutes.
- 3Gradually whisk in 3 cups of water. Bring to a simmer.
- 4Slowly sprinkle in shiro powder while whisking constantly to prevent lumps. Simmer for 15 minutes, stirring often, until thick and creamy.
- 5Season with salt. Serve with injera.
