Shiro Wot

Ingredients

  • *1 cup shiro powder (roasted chickpea flour)
  • *2 large onions, finely diced
  • *3 tbsp oil
  • *3 cloves garlic, minced
  • *1 tbsp ginger, grated
  • *2 tbsp tomato paste
  • *1 tsp turmeric
  • *Salt to taste
  • *Injera for serving

Instructions

  1. 1Cook onions in oil over medium heat until softened and translucent, about 10 minutes.
  2. 2Add garlic, ginger, tomato paste, and turmeric. Cook for 3 minutes.
  3. 3Gradually whisk in 3 cups of water. Bring to a simmer.
  4. 4Slowly sprinkle in shiro powder while whisking constantly to prevent lumps. Simmer for 15 minutes, stirring often, until thick and creamy.
  5. 5Season with salt. Serve with injera.
