Classic Smash Burger

Ingredients

  • *600g ground beef (80/20)
  • *4 brioche buns
  • *4 slices American cheese
  • *1 onion, thinly sliced
  • *Pickles
  • *Ketchup and mustard
  • *Salt and pepper
  • *Butter for buns

Instructions

  1. 1Divide beef into 8 equal balls (about 75g each). Season generously with salt and pepper.
  2. 2Heat a cast-iron skillet or flat griddle to very high heat.
  3. 3Place a beef ball on the griddle and immediately smash flat with a sturdy spatula. Cook for 2 minutes until edges are crispy.
  4. 4Flip, add cheese to half the patties, and cook 1 more minute.
  5. 5Butter and toast the brioche buns on the griddle.
  6. 6Stack two patties per bun with onion, pickles, ketchup, and mustard.
