Classic Smash Burger

Ingredients
- *600g ground beef (80/20)
- *4 brioche buns
- *4 slices American cheese
- *1 onion, thinly sliced
- *Pickles
- *Ketchup and mustard
- *Salt and pepper
- *Butter for buns
Instructions
- 1Divide beef into 8 equal balls (about 75g each). Season generously with salt and pepper.
- 2Heat a cast-iron skillet or flat griddle to very high heat.
- 3Place a beef ball on the griddle and immediately smash flat with a sturdy spatula. Cook for 2 minutes until edges are crispy.
- 4Flip, add cheese to half the patties, and cook 1 more minute.
- 5Butter and toast the brioche buns on the griddle.
- 6Stack two patties per bun with onion, pickles, ketchup, and mustard.
