Som Tum (Green Papaya Salad)

Ingredients
- *2 cups green papaya, shredded
- *6 cherry tomatoes, halved
- *1 cup long beans, cut into 1-inch pieces
- *3 Thai bird chiles
- *3 cloves garlic
- *2 tbsp dried shrimp
- *2 tbsp roasted peanuts
- *2 tbsp fish sauce
- *2 tbsp lime juice
- *1 tbsp palm sugar
Instructions
- 1In a large mortar, pound garlic and chiles into a rough paste.
- 2Add long beans and bruise lightly. Add dried shrimp and peanuts, pounding gently.
- 3Add shredded papaya and tomatoes. Lightly pound and toss to bruise the ingredients.
- 4Season with fish sauce, lime juice, and palm sugar. Toss to combine.
- 5Taste and adjust the balance of sour, salty, sweet, and spicy. Serve immediately with sticky rice.
