Tacos al Pastor

Ingredients
- *800g pork shoulder, thinly sliced
- *3 dried guajillo chiles
- *2 chipotle peppers in adobo
- *1 cup pineapple, diced
- *1 small onion, diced
- *Fresh cilantro
- *12 small corn tortillas
- *2 cloves garlic
- *1 tsp cumin
- *Juice of 2 limes
Instructions
- 1Rehydrate guajillo chiles in hot water for 15 minutes. Blend with chipotle, garlic, cumin, and lime juice to make the adobo marinade.
- 2Coat pork slices in the marinade and let rest for at least 20 minutes.
- 3Cook pork in a hot cast-iron skillet until charred on the edges, about 3 minutes per side.
- 4Warm tortillas on a dry skillet. Chop the cooked pork into small pieces.
- 5Assemble tacos with pork, diced pineapple, onion, and cilantro. Squeeze lime over the top.
