Tiramisu

Ingredients
- *500g mascarpone cheese
- *4 egg yolks
- *100g sugar
- *300ml strong espresso, cooled
- *2 tbsp Marsala wine or coffee liqueur
- *200g ladyfinger biscuits (savoiardi)
- *Unsweetened cocoa powder
- *Dark chocolate shavings
Instructions
- 1Whisk egg yolks and sugar until thick and pale, about 5 minutes with an electric mixer.
- 2Gently fold in mascarpone until smooth and creamy. Be careful not to deflate the mixture.
- 3Mix espresso with Marsala wine. Quickly dip each ladyfinger into the coffee mixture (do not soak).
- 4Layer dipped ladyfingers in a dish, then spread half the mascarpone cream. Repeat layers.
- 5Dust the top generously with cocoa powder. Refrigerate for at least 4 hours, ideally overnight.
- 6Top with chocolate shavings before serving.
