Tiramisu

Ingredients

  • *500g mascarpone cheese
  • *4 egg yolks
  • *100g sugar
  • *300ml strong espresso, cooled
  • *2 tbsp Marsala wine or coffee liqueur
  • *200g ladyfinger biscuits (savoiardi)
  • *Unsweetened cocoa powder
  • *Dark chocolate shavings

Instructions

  1. 1Whisk egg yolks and sugar until thick and pale, about 5 minutes with an electric mixer.
  2. 2Gently fold in mascarpone until smooth and creamy. Be careful not to deflate the mixture.
  3. 3Mix espresso with Marsala wine. Quickly dip each ladyfinger into the coffee mixture (do not soak).
  4. 4Layer dipped ladyfingers in a dish, then spread half the mascarpone cream. Repeat layers.
  5. 5Dust the top generously with cocoa powder. Refrigerate for at least 4 hours, ideally overnight.
  6. 6Top with chocolate shavings before serving.
