Tonkotsu Ramen

Ingredients
- *1kg pork bones
- *4 portions fresh ramen noodles
- *200g chashu pork belly
- *4 soft-boiled eggs, marinated in soy
- *4 sheets nori
- *4 green onions, sliced
- *2 cloves garlic, minced
- *1 tbsp ginger, sliced
- *2 tbsp white miso paste
- *Sesame oil
Instructions
- 1Blanch pork bones in boiling water for 10 minutes, then drain and rinse to remove impurities.
- 2Return bones to the pot with fresh water, garlic, and ginger. Boil vigorously for 3 hours, adding water as needed, until broth is milky white.
- 3Strain the broth and whisk in miso paste. Season with salt to taste.
- 4Cook ramen noodles according to package directions. Slice chashu pork.
- 5Divide noodles into bowls, ladle in hot broth, and top with chashu, marinated egg, nori, green onions, and a drizzle of sesame oil.
