Tonkotsu Ramen

Ingredients

  • *1kg pork bones
  • *4 portions fresh ramen noodles
  • *200g chashu pork belly
  • *4 soft-boiled eggs, marinated in soy
  • *4 sheets nori
  • *4 green onions, sliced
  • *2 cloves garlic, minced
  • *1 tbsp ginger, sliced
  • *2 tbsp white miso paste
  • *Sesame oil

Instructions

  1. 1Blanch pork bones in boiling water for 10 minutes, then drain and rinse to remove impurities.
  2. 2Return bones to the pot with fresh water, garlic, and ginger. Boil vigorously for 3 hours, adding water as needed, until broth is milky white.
  3. 3Strain the broth and whisk in miso paste. Season with salt to taste.
  4. 4Cook ramen noodles according to package directions. Slice chashu pork.
  5. 5Divide noodles into bowls, ladle in hot broth, and top with chashu, marinated egg, nori, green onions, and a drizzle of sesame oil.
